Recipe for our favorite mug cake

Sometimes it’s the little things that make spring special. A quiet morning, fresh flowers on the table, and a warm, freshly baked cake straight from your favorite cup. This little cup cake is perfect for Easter time: quick to make, wonderfully moist, and just the right portion for a small sweet break. It’s baked directly in your favorite Eulenschnitt cup, simple and without much preparation.

Ingredients (for 1 cup)

  • 3 tbsp flour
  • 2 tbsp ground nuts
  • 2 tbsp sugar
  • ½ tsp baking powder
  • 1 pinch cinnamon
  • 1 egg
  • 2 tbsp milk
  • 2 tbsp neutral oil
  • Optional: 1 tbsp chopped walnuts

For the topping

  • 2 tbsp cream cheese
  • 1 tsp powdered sugar
  • small chocolate Easter bunny
  • chopped nuts (we used hazelnuts & pistachios)

Preparation

Mix all the dry ingredients directly in the cup. Add egg, milk, and oil and stir everything into a smooth batter.

Bake the cake either in the microwave (about 90 seconds at 800 watts) or in the oven (180 °C, about 12–15 minutes).

For the topping, mix cream cheese and powdered sugar and spread on the slightly cooled cake. Sprinkle with chopped nuts and place a small chocolate Easter bunny on top. Your sweet Easter nest for snacking is ready! 

Little Easter joy in a cup
